"Pick-Me-Up" or Tiramisu Without Eggs

Tiramisu Without Eggs recipe

Tiramisu is one of the most popular Italian desserts and one of my favourites. An Italian dictionary defines tiramisu as a semifreddo that consists of sponge biscuits, mascarpone cheese and eggs, sprinkled with cocoa powder.

The only thing that worries me about tiramisu is that the classic recipe contains fresh raw eggs. I think it could be risky to use these in preparing this delicious dessert, especially during hot summer weather.

After searching the Internet, I found this simple version of the traditional Italian dessert that is very delicious, light and simple to prepare. Another nice thing about this tiramisu is that it isn’t too sweet.

Preparation time: about 20 minutes

Cooking time: no cooking required

Serves: four


  • 350 g mascarpone cheese
  • 100 g fresh double cream
  • 100 g condensed milk
  • 8 savoiardi biscuits (ladyfingers or sponge finger biscuits)
  • 50 ml strong coffee
  • cocoa powder for dusting
  • sugar to taste


  1. To prepare tiramisu without eggs, start by making coffee with a mocha pot or a coffee machine. When the coffee is ready, sugar to taste and set aside to cool.
  2. Place the mascarpone cheese in a large bowl. Add the condensed milk and mix the ingredients with a spatula. Put the mixture in the fridge.
  3. Pour the cream into a cold bowl and whip it with an electric mixer until thick.
  4. Add the whipped cream to the mascarpone cheese and condensed milk mixture. With a spatula, fold the whipped cream lightly into the mixture, taking care not to lose the volume.
  5. Assemble four glasses. Pour the creamy mixture into a pastry bag and put a spoonful of the mixture into each glass.
  6. Pour the coffee into a shallow bowl. Cut the sponge biscuits in half to fit the glasses. Quickly dip the biscuits into the coffee and put one in each glass. Top with another layer of the creamy mixture, then dust with the cocoa powder.
  7. Continue with another biscuit layer and finish with a cream layer, spread up to the edge of the glass.
  8. Cover and chill in the fridge.
  9. Dust with cocoa powder just before serving.
